Gut healing chicken bone broth

The medicinal benefits of bone broth were known in ancient cultures like the Chinese, who have been using broth to strengthen kidney Qi and support the digestive system for over 2500 years! Broth made from animal bones, cooked on a low heat for hours, packs a punch of easily digestible amino acids. These amino acids, drawn from connective tissues of the animal, are the same ones that make up our own connective tissues such as our joints, skin, hair and nails. So as we consume this liquid gold, we are nourishing our body and helping to heal the gut - which is something everyone is in need of these days! This is a basic recipe for chicken bone broth, but can be modified for beef bones. I highly recommend going organic when you can as bones become a storage space for heavy metals and other toxins.

Ingredients

2 chicken frames

2 carrots

2 sticks of celery

1 large onion

1 tablespoon apple cider vinegar

1/2 teaspoon kelp salt and/or a pinch of karengo, kombu or other seaweed

1/2 teaspoon salt

Filtered water to cover everything

Method

Chop the vegetables and add them to a large pot along with the chicken frames and seaweed and salt. Cover everything with filtered water and cook the broth on a low heat for 2-3 hours. Serve on its own, topped with fresh parsley or add to soups and curries.
