Berry burst jelly

Gelatin is a great source of amino acids for healing and sealing the gut lining, supporting the health of our bones & joints & strengthening our skin barrier to improve skin elasticity. Gelatin also contains glycine, an amino acid that doubles as an inhibitory neurotransmitter, reducing anxiety and improving sleep. This berry burst jelly recipe to boost your intake of these beneficial amino acids and antioxidants.



Ingredients

1 cup frozen organic strawberries

1 cup frozen organic raspberries

1/3 cup frozen organic blueberries

2 cups organic natural apple juice

3 tablespoons grass fed gelatin powder

1/2 cup water


Method

Blend strawberries with apple juice, add to a saucepan & heat. In a separate bowl “bloom” the gelatin by mixing gelatin powder with water. Add bloomed gelatin to the saucepan and stir until dissolved. Add half a cup of whole raspberries to the mix & stir through.

Place the jelly in a bowl in the fridge for 2-3 hours to set. Peel jelly gently away from the bowl using your fingers and flip onto a plate, topping with the remainder of raspberries & blueberries.
