Zesty Mexican Guacamole

Mexico is a country close to my heart - so much so that I’ve travelled there 3 times! Not only do I love the people & places of this magical country but the food is some of my favourite! I love the medley of tart, fresh, herby & spicy flavours used in Mexican cuisine and absolutely adore a zesty guacamole. Here’s a simple recipe to accompany tacos or tortilla chips.

Ingredients

4 ripe avocados
2 large cloves of garlic
2 limes or lemons
1 heaped Tsp pickled jalapeños
1 tsp juice from pickled jalapeños
Pinch salt
2 tablespoons olive oil
Pinch of paprika
Sliced Spring onions, shallots and coriander

Method

Place flesh from the avocados in a large bowl and mash using a fork until smooth-ish (a few chunky bits are ok). Add crushed garlic, juice from limes or lemons, chopped pickled jalapeños and their juice, salt and olive oil and mix all ingredients. Top with sliced spring onion, shallots or coriander & a pinch of paprika.
