Sumac scented Hummus

This Hummus is super quick, easy and affordable dip to make at home. Chickpeas contain protein and tahini is a great source of healthy omega-3 fatty acids and calcium (try unhulled tahini for even greater nutritional value). A light sprinkling of antioxidant rich sumac on top provides zesty twist.

Ingredients

2 cans organic chickpeas (BPA free) OR 1 cup dried chickpeas (soaked for 12 hours)

2 lemons

4 tablespoons unhulled tahini

1/4 cup extra virgin olive oil

3 cloves garlic

2 teaspoons sumac powder

1 teaspoon salt

1 teaspoon chilli flakes

Method

Drain the chickpeas, add to a food processor and pulse until smooth. Add the juice of 2 lemons and zest of 1 lemon, tahini, olive oil, crushed garlic, salt and chilli flakes to the mixture and process to a creamy consistency. If the hummus is too thick, add another splash of olive oil and a little water.  Serve the hummus in a bowl topped with a sprinkling of sumac.
